Ingredients
4 very ripe bananas (medium-large with brown spots). Reduce to 3 bananas if you use fresh pineapples (instead of dried)
1/3 cup unsalted butter, melted and cooled slightly
3/4 cup brown sugar -packed (1/2 cup for less sweet, 1 cup for sweeter)
1 large egg, beaten
1 tsp vanilla extract
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1 tsp baking soda
1 pinch of salt
1 1/2 cups unbleached all-purpose flour
1/4 cup unsweetened dried cranberries
1/4 cup dried or fresh pineapple (finely chopped and patted dry)
10 pecan halves (standard loaf pan) or 24 pieces (for mini loaf pan)-for toppings
Instructions
1. Preheat your oven to 350°F (175°C). Grease a 4x8 inch loaf pan with butter or line it with parchment paper, leaving an overhang on the sides for easy removal.
2. In a large mixing bowl, mash the bananas until smooth. Stir the melted butter into the mashed bananas first. The fat coats the banana sugars and helps with the final texture, making this a fantastic banana bread recipe.
3. Mix in the brown sugar, beaten egg, vanilla extract, ginger, cinnamon, and salt. Stir until the mixture looks uniform and slightly bubbly.
4. Sprinkle the baking soda over the wet mixture and stir it in thoroughly before adding the flour.
5. Gently fold in the flour. Stop mixing as soon as you see no more white streaks. Over-mixing at this stage makes the bread tough!
6. Gently fold in your cranberries and pineapple, adding a tropical twist to your banana bread.
Pro Tip: Toss the dried fruit in a teaspoon of flour before adding them; this prevents them from sinking to the bottom of the pan.
7. Pour the batter into the pan. Arrange the pecan halves on top.
Standard Loaf: Bake for 50–60 minutes. Mini Loaves: Bake for 20–25 minutes. Test: A toothpick should come out clean or with just a few moist crumbs (no wet batter).
8. Let it cool in the pan for 10 minutes, then move to a wire rack. Serve with a spread of fresh cream cheese as you suggested—it balances the sweetness of the pineapple perfectly and enhances the experience of cooking with bananas!
