Jicama Carrot Stir Fry Recipe

Ingredients


1 medium jicama, peeled and julienned

1 large carrot, peeled and julienned

3 stalks green onion, cut into 2-inch pieces

2 cloves garlic, minced

1 tbsp cooking oil (vegetable or grapeseed)

2 tsp mushroom seasoning

1 tbsp water (optional, for steam)


Instructions


For a delicious and healthy cooking option, heat the wok or large skillet over medium-high heat. Add the oil, and once it’s shimmering, toss in the minced garlic for about 30 seconds until golden and fragrant. Next, add the jicama to the wok, a key ingredient in many jicama recipes, and stir-fry for 5 minutes. If the pan appears dry or the jicama starts to catch, add 1 tablespoon of water to create a bit of steam. 


Then, incorporate the carrots into the pan and continue to stir-fry for 8–10 minutes. The goal is to achieve a 'tender-crisp' texture—cooked through but still offering a slight snap. Before finishing, add the green onions and sprinkle the mushroom seasoning over the vegetables. Toss everything together for 30 seconds until the onions are bright green and wilted. 


Remove from heat immediately and serve warm as a delightful stir fry.
