Summer Chicken Salad with Croissants

  

Ingredients

  • 1 stalk celery, finely diced
  • ¼ Granny Smith apple, finely diced
  • ½ peach or nectarine (firm and crunchy), finely diced
  • 2 baby kosher dill pickles, finely diced
  • ½ rotisserie chicken breast, diced
  • ½ to ⅔ cup mayonnaise (adjust for desired creaminess)
  • ½ tbsp fresh cilantro, finely chopped
  • 1 dash salt (to taste)
  • 1 dash black pepper  (to taste)
  • Croissants (for serving)

Instructions

  1. Prep the Ingredients: Finely dice the celery, apple, peach/nectarine, and dill pickles so they are uniform in size.
  2. Combine: In a medium bowl, mix together the diced produce, chicken, cilantro, and mayonnaise  until well combined.
  3. Season: Add a dash of salt and pepper. Taste the mixture and adjust the seasoning or mayo to your preference.

Chill and Serve: Cover and chill in the refrigerator for a couple of hours to let the flavors marry. Serve spooned into sliced croissants
